Left-overs! Read all about it!

Personally, I like to snack-it-up whenever I can. Who doesn't? There's something very pleasurable and very 'weekend' about a cheese and cracker plate with some On Demand... Peanut butter and jelly crackers over the kitchen sink... Cold pizza...You know where I'm going with this.

But every now and then, the obvious snacks are missing and all you have are left over veggies from last nights dinner. So, I suggest cranking up your oven to 425' and getting those veggies back in the oven for an amazing left-over snack. You'll be so proud of yourself, you might even blog about it. Wink wink.

Roasted Left-over Veggies with Spicy Garlic Dipping Sauce

Two hands optional.

Dress left-over veg in olive oil and re-reason with salt and pepper. Roast in a hot 425' oven for 10 minutes, until crisp around the edges. In a small bowl combine cider vinegar, chili flakes, garlic, a little honey and salt and pepper. The goal here is to create a bright, piquant sauce. Pile the roasted veggies in a warm bowl and dip and eat!
